In Tunisia, this creamy artichoke dip is so revered it?s called Artichoke Caviar. It?s made from the simplest ingredients ? artichokes, garlic, parsley, and extra virgin olive oil, but it?s the freshness of the artichokes, packed straight from local fields, that gives it it?s surprising flavor. According to Ancient Greek legend, while the god Zeus was visiting his brother Poseidon, he spotted a young, beautiful mortal woman named Cynara. Unlike many mortals, she was unafraid of being in the presence of a god, and the ever-lustful Zeus quickly seduced her. He so thoroughly enjoyed their tryst that he offered to make her a goddess, so that she would be closer to Olympus and more readily available while his wife Hera was away. Cynara accepted Zeus' offer, but soon grew homesick, and one day decided to sneak back into the mortal realm to visit her mother. Upon returning, Zeus discovered what she had done, and became very angry- this was most un-goddess-like behavior! As punishment, he sent her back to the mortal realm and transformed her into the plant we now call the artichoke.

Bacon, Artichoke and Brie Crostini

This recipe is so delicious it tastes lke spring summer winter and fall all in one bite and once you have it you will never make pork chops another way again, so yummy blahh blahhh.
Bacon, Artichoke and Brie Crostini

INGREDIENTS

  • 1 Artisan baguette - sliced thinly and toasted
  • 1 jar Cook's Pantry artichoke spread
  • 3 slices Applewood Smoked Bacon - sliced thinly and cut into ½ inch pieces
  • 1 wedge Triple Cream Brie - cut into then slices and leave at room temperature

DIRECTIONS

  1. Preheat oven to 400 degrees.
  2. On a parchment lined baking sheet place thinly sliced baguette and brush with olive oil, salt and pepper. Toast in oven until just golden - about 6-10 minutes. Let cool.
  3. In medium skillet cook bacon until desired crispness and then chop into bits.
  4. Cut brie into thin slices.
  5. To assemble: spread a layer of artichoke spread on each crostini, followed by the brie cheese slice and top with a sprinkling of bacon bits and place on serving tray.

Turkey Tortilla Wrap with Artichoke Spread and Swiss

Turkey Tortilla Wrap with Artichoke Spread and Swiss

INGREDIENTS

  • 4 large 10-12 inch Tortillas - whole wheat flour or spinach
  • 1 jar of Cook's Pantry artichoke spread
  • 8 slices of roasted turkey
  • 8 slices swiss cheese
  • 1 cup shredded carrot
  • 1 cup thinly sliced cucumber
  • 2 cups sunflower sprouts


DIRECTIONS

  1. To soften tortilla a bit - place over open gas flame and flip several times for 10-15 seconds. Let cool. Layer tortilla first with artichoke spread all over, then add turkey slices, swiss cheese, shredded carrot, cucumber and lastly the spouts.
  2. Roll tortillas tightly into a wrap, slice on the diagonal and place toothpick in center to hold together if necessary.
