Two things make a great sauerkraut – how you make it, and the ingredients. We use organic cabbage grown on small farms, and we prepare it the old fashioned way, with just salt and water, made in season and packed straight from local fields.

Sauerkraut is a great source of vitamin C and when the Dutch and Germans explored the high seas, they took kraut with them to prevent scurvy. It is believed to aid digestion and strengthen intestines.

Reuben on Rye with Chili Mayo

This recipe is so delicious it tastes lke spring summer winter and fall all in one bite and once you have it you will never make pork chops another way again, so yummy blahh blahhh.
Reuben on Rye with Chili Mayo

INGREDIENTS

  • 2 - 3 cups Cook's Pantry Sauerkraut
  • 1 ½ cups gruyere cheese - grated
  • 8-12 slices corned beef
  • 8 slices thin rye bread
  • 2 tablespoons butter - room temperature

SPREAD

  • ¼ cup mayonnaise
  • 1 tablespoons sweet chili sauce

DIRECTIONS

  1. To assemble: Butter one side of each slice of bread, set on cutting board butter side down.
  2. Spread chili mayo on each inside slice of bread, then on four of the bread slices place some sauerkraut, then the corned beef slices, next some grated cheese then the rest of the sauerkraut evenly distributed between the four slices. Place the other bread slice butter side up and gently press down.
  3. Heat a large skillet over medium heat. Cook sandwiches covered 2-3 minutes until golden and cheese begins to melt.
  4. Turn and cook another 2-3 minutes until cheese is melted and bread is golden. Serve with Cook's Pantry dill pickle spears.

Tart Apple Sauerkraut Salad

Tart Apple Sauerkrakut Salad

INGREDIENTS

  • 3 cups Cook's Pantry sauerkraut
  • 1 granny smith apple - small dice
  • 1 cup carrot - shredded
  • ¼ cup red onion - thinly sliced
  • ¼ cup dried cranberries
  • ½ cup marcona almonds - chopped
  • 2 tablespoons fresh mint - chiffonade

DRESSING

  • 1 cup olive oil
  • 2 teaspoon apple cider vinegar
  • 1 teaspoon Cook's Pantry Dijon mustard
  • ½ teaspoon honey
  • 2 tablespoons fresh squeezed orange juice
  • Salt and pepper


DIRECTIONS

  1. In medium bowl combine all the salad ingredients and gently toss together.
  2. In a small bowl combine apple cider vinegar, Dijon, honey and orange juice. Slowly add olive oil whisking until emulsified. Add pinch of salt and pepper. Taste and adjust if necessary.
  3. Drizzle salad with dressing and gently toss.
