Harissa is a household staple in Tunisia and it deserves a spot in your pantry too. Much more than a hot pepper paste, Harissa, a blend of dried hot peppers, garlic, extra virgin olive oil, and spices, gives your dishes a complex, smoky heat and elevates them to another level.

Harissa is served with almost every meal and snack in most African countries. It's a common condiment but can also be used to flavor curries and stews. It's ingredients vary but most often you can find it made from roasted red peppers, serrano peppers, garlic, spices and herbs such as coriander and saffron and olive oil for preservation. In Tunisia, harissa is served with every meal and is used to prepare and season everything from meat and fish to eggs and toast. According to many North Africans and culinary historians, the Turks brought hot peppers with them when they conquered Tunisia.

This recipe is so delicious it tastes lke spring summer winter and fall all in one bite and once you have it you will never make pork chops another way again, so yummy blahh blahhh.
Harissa Chicken Wings

INGREDIENTS

  • 2 pounds chicken wings
  • 3 tablespoons Cook's Pantry Harissa
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1 tablespoon garlic - crushed
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon salt

For Garnish:

  • 1 tablespoon toasted sesame seeds
  • 1 scallion - finely chopped or shredded

Yogurt Sauce

  • ½ cup greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1 tablespoon fresh mint - chiffonade
  • Salt

DIRECTIONS

  1. Preheat oven to 400 degrees.
  2. In a large bowl combine harissa, honey, lime juice, zest, garlic, salt and oil and mix well to combine.
  3. Add chicken wings and toss well to coat.
  4. Cover and let marinate for 30 minutes or longer. On a parchment lined baking sheet place chicken wings and bake for 20-25 minutes until well caramelized on edges.
  5. Place on desired serving dish and garnish with sesame seeds and scallion. Serve with yogurt sauce.

Harissa Lamb Burger with Crispy Sweet Potato Curls

Harissa Lamb Burger with Crispy Sweet Potato Curls

INGREDIENTS

  • 1 ¼ pounds ground lamb
  • ¼ cup Cook's Pantry Harissa
  • ½ cup parsley - chopped
  • ½ cup mint - chopped
  • 1 scallion - finely chopped
  • 1 egg - whisked in bowl
  • 1/4 cup panko bread crumbs
  • Salt and pepper
  • 1 cup arugula - garnish
  • 4 Burger buns - toasted
  • Cook's Pantry dill slices and arugula for garnish
  • 1 large sweet potato - long thin shreds using mandoline or shredder
  • 1-2 tablespoons olive oil
  • Salt and pepper

Sweet Chili Mayo

  • ½ cup mayonnaise
  • 1-2 tablespoons sweet chili sauce


DIRECTIONS

  1. Heat oven to 400 degrees.
  2. Toss shredded sweet potato with olive oil, salt and pepper and place on sheet pan.
  3. Bake until crispy about 15-20 minutes, turn halfway through.
  4. While sweet potatoes are cooking mix lamb with all ingredients until well combined.
  5. Divide into 4 burgers. Heat grill or skillet over medium high heat and cook burgers to desired doneness.
  6. To assemble burger - spread the bottom bun with the chili mayo, top with arugula, burgers, pickles and crispy sweet potato curls and then the top bun.
