Avocado Toast with Beet Sauerkraut

Avocado Toast with Beet Sauerkraut

INGREDIENTS

  • 2-3 ripe avocados
  • 4-6 slices thick artisan style bread
  • 1 cup Cook's Pantry beet sauerkraut
  • 2 tablespoons fresh dill and cilantro - chopped or torn
  • 1 lime - quartered
  • Cayenne pepper
  • Maldon sea salt
  • Olive oil

DIRECTIONS

  1. Brush bread slices with olive oil and toast in 400 degree oven until toasted.
  2. Halve avocados and scoop out insides and spoon onto toasts.
  3. Spoon a generous amount of beet sauerkraut on top of avocado, sprinkle with herbs and a pinch of maldon sea salt and a squeeze of lime and pinch of cayenne pepper.
