Harissa Lamb Burger with Crispy Sweet Potato Curls

Harissa Lamb Burger with Crispy Sweet Potato Curls

INGREDIENTS

  • 1 ¼ pounds ground lamb
  • ¼ cup Cook's Pantry Harissa
  • ½ cup parsley - chopped
  • ½ cup mint - chopped
  • 1 scallion - finely chopped
  • 1 egg - whisked in bowl
  • 1/4 cup panko bread crumbs
  • Salt and pepper
  • 1 cup arugula - garnish
  • 4 Burger buns - toasted
  • Cook's Pantry dill slices and arugula for garnish
  • 1 large sweet potato - long thin shreds using mandoline or shredder
  • 1-2 tablespoons olive oil
  • Salt and pepper

Sweet Chili Mayo

  • ½ cup mayonnaise
  • 1-2 tablespoons sweet chili sauce

DIRECTIONS

  1. Heat oven to 400 degrees.
  2. Toss shredded sweet potato with olive oil, salt and pepper and place on sheet pan.
  3. Bake until crispy about 15-20 minutes, turn halfway through.
  4. While sweet potatoes are cooking mix lamb with all ingredients until well combined.
  5. Divide into 4 burgers. Heat grill or skillet over medium high heat and cook burgers to desired doneness.
  6. To assemble burger - spread the bottom bun with the chili mayo, top with arugula, burgers, pickles and crispy sweet potato curls and then the top bun.
