Reuben on Rye with Chili Mayo

INGREDIENTS

  • 2 - 3 cups Cook's Pantry Sauerkraut
  • 1 ½ cups gruyere cheese - grated
  • 8-12 slices corned beef
  • 8 slices thin rye bread
  • 2 tablespoons butter - room temperature

SPREAD

  • ¼ cup mayonnaise
  • 1 tablespoons sweet chili sauce

DIRECTIONS

  1. To assemble: Butter one side of each slice of bread, set on cutting board butter side down.
  2. Spread chili mayo on each inside slice of bread, then on four of the bread slices place some sauerkraut, then the corned beef slices, next some grated cheese then the rest of the sauerkraut evenly distributed between the four slices. Place the other bread slice butter side up and gently press down.
  3. Heat a large skillet over medium heat. Cook sandwiches covered 2-3 minutes until golden and cheese begins to melt.
  4. Turn and cook another 2-3 minutes until cheese is melted and bread is golden. Serve with Cook's Pantry dill pickle spears.
