Clementine Marmalade Salad Dressing

Clementine Marmalade Salad Dressing

INGREDIENTS

Dressing:

  • 3 tsp Cook’s Pantry Clementine Marmalade
  • 1 tsp Honey
  • ¼ tsp Ground Ginger
  • ½ tsp Salt
  • ¼ tsp Ground Pepper
  • 1 pinch Smoked Paprika
  • Lime juice from half of a lime
  • 2 tsp Water
  • 1 tsp Olive Oil
  • 2 tsp Rice Wine Vinegar
  • ¼ tsp Sesame Oil
  • 1 tsp Brown Sugar

Salad:

  • ¼ cup Daikon Radish - cut Julienne style
  • ½ cup Jicama - cut Julienne style
  • ¼ cup Carrot - cut Julienne style
  • 1 cup Apples - cut Julienne style
  • ¼ cup Cilantro - minced
  • Optional: topped with Sesame Seasoning Blend with sea salt and minced garlic

DIRECTIONS

  1. Slice daikon radish, jicama, carrots, and apples together. Mince the cilantro and add everything together into a bowl. Put aside.
  2. Mix together warmed honey, water, olive oil, rice wine vinegar, sesame oil and lime juice. Add in the clementine marmalade, ground ginger, salt, pepper, smoked paprika, and brown sugar.
  3. Pour the salad dressing in the bowl with the sliced vegetables and fruit.
  4. If possible, make the recipes hours in advance and let it chill in the fridge.
  5. Before serving, we recommend topping it with a sesame seasoning blend. Enjoy!
