Fig & Ricotta French Toast Sandwiches

INGREDIENTS

  • 8 Slices of Sourdough
  • ½ cup of ricotta cheese
  • ⅓ cup of Cook’s Pantry Fig Fruit Spread
  • 2 large eggs
  • ½ cup milk or milk alternative
  • ½ Tsp vanilla extract
  • pinch of cinnamon
  • pinch of salt
  • 4 TBSP butter or vegan butter
  • powdered sugar for dusting

DIRECTIONS

  1. Spread ricotta cheese on to four slices of bread.
  2. Spread Cook’s Pantry Fig Fruit Spread onto remaining 4 slices.
  3. Close the sandwiches, pressing gently.
  4. Whisk eggs, milk, vanilla cinnamon and salt. Pour mixture into shallow bowl or pie plate.
  5. Dip both sides of each sandwich into mixture until they are well coated.
  6. In a large skillet, melt 2 TBSP of butter and cook each sandwich on medium heat until golden. About 3 min per side.
  7. Cut each sandwich in half and dust with powdered sugar.
  8. Serve immediately.
