Lemon Harissa Fingerling Potatoes

Lemon Harissa Fingerling Potatoes

INGREDIENTS

  • 3/4 pound fingerling potatoes, cut into quarter inch bites
  • 1 tablespoon olive oil
  • 3 cups finely chopped kale
  • 2 teaspoons Cook's Pantry Spicy Harissa
  • 1/3 cup diced onion
  • 2 TBSP freshly squeezed lemon juice
  • 1/2 teaspoon cumin
  • 1/4 teaspoon sea salt

DIRECTIONS

  1. Add olive oil to a large skillet and heat over medium-high heat. When oil is hot, add diced onion and cook until they begin to soften.
  2. Add diced potatoes, harissa, lemon juice, cumin, and salt. Mix together until all potatoes are well-coated. Cover and stir occasionally until the edges of the potatoes get crispy and brown and the centers are tender.
  3. After your potatoes have cooked for 10-15 min remove cover and add the finely chopped kale and mix well. Continue to cook for another 5 min until kale has softened.
  4. Transfer to a serving dish. Sprinkle a bit more sea salt and a squeeze of lemon on top.
